Fluffy down home cornbread
 like momma used to make

This recipe has been tested and proven to be–simply delicious.  Jiffy cornbread mix was the best kept secret for years, until I discovered it contained animal by-products (pork).   Kitchens around the gulf coast fooled many unsuspecting  soul food lovers with Jiffy mix.

You can now come out of the closet and make fluffy-down-home cornbread
 like momma used to make– and not the instant stuff.

½ cup cornmeal
1 ½ cup flour
1/4 cup sugar
1 tablespoon baking powder
½ teaspoon salt
1/3 cup oil
3 tablespoons butter, melted
1 eggs, beaten
1 ¼ cup of buttermilk

Add dry ingredients, make a well and add oil, butter, eggs, and milk into the center. Stir until just mixed (batter will be loose – don’t  worry). Bake in a cast iron round pan at 350 degrees for 35 minutes.
